Dr. Steven Gundry, author of "The Plant Paradox: The Hidden Dangers in 'Healthy' Foods That Cause Disease and Weight Gain," discusses how lectins from plant foods can cause physical and mental symptoms and promote obesity. As a vegetarian, he experienced high cholesterol and blood pressure and couldn’t lose weight despite a rigorous exercise program. His research led him to a new diet paradigm which enabled him to shed 70 pounds and optimize his cardiovascular risk factors. What are lectins, and how do they inflict damage on the body? Could lectins explain the “Wheat Belly” phenomenon? Why “healthy” foods like grains, beans, squash, tomatoes, potatoes, peanuts and cashews, and even chia seeds can cause harm.
