Fruit and nut chocolates

Serving size – 1 ball


1/2 cup dried apricots
1/4 cup dried figs
1/4 cup almonds, sliced
1/4 cup walnuts, chopped
1/4 cup lemon juice, freshly squeezed
4 ounces bittersweet chocolate





  1. Put the fruit and nuts into a food processor and chop until they’re small.

  2. Add the lemon juice and chop again. Scrape the mixture into a bowl and taste it to see if more lemon juice is needed.

  3. Melt the chocolate in a heatproof bowl in the microwave for about 2 minutes or, preferably over a double boiler, until it’s just melted.
  4. Roll the fruit mixture into small balls. Using two forks, roll each ball in the melted chocolate.
  5. Place the balls on oiled foil to cool and set. If the chocolate gets too hard to work with, briefly reheat it.
