Cucumber and feta bites

Serves 10-12

1 cup feta cheese, crumbled
1/2 cup sour cream
3 tablespoons fresh parsley, chopped
2 tablespoons fresh mint, chopped
3 tablespoons sun dried tomatoes, chopped
1 clove garlic chopped
Salt
Black pepper, freshly ground
2 medium cucumbers
1/4 cup fresh basil, chopped
1/4 cup kalamata olives, pitted and chopped

  1. In a large bowl, mix the first eight ingredients. Cover and chill for at least 2 hours.
  2. Using a sharp knife, trim the ends from the cucumber. Slice the cucumber into quarter-inch-thick slices. Spoon about 1 teaspoon of the cheese mixture onto each cucumber slice. Arrange the cucumber slices on a serving platter.
  3. In a small bowl, combine the basil and the olives. Spoon some of the mixture over each cucumber slice. Serve immediately.
